Recipe: A Quick Mexican Dinner

So last night I got home after a long day of dancing and I was starving. My Mom helped me out and we made a delicious dinner. It’s very fast.

These portions make enough for about 4 people. My brother and sister were hungry too so we made enough for them.

1 Can of beans, we used chile beans, but you can use whatever kind you want


1 Package of tortillas


About a quarter of an onion depending on how much you are making, dice it up


1 Can of chicken, it can be sliced chicken if you want


Some Mexican seasoning, didn’t get a picture of that.

And some olive oil for your pan, didn’t get a picture of that either (boo)

So once you have all your ingredients the next thing you want to do is saute your onions in the olive oil. When the onions are kind of translucent add your chicken and beans, and some mexican seasoning.

Warm up your tortillas in the microwave and grade some cheese if you want it and you’re done!

If you want a little side dish then you can also make some guacamole. To make it really fast just mash up some avocados, and some sliced tomatoes or salsa, some diced onion, a few squirts of lime or lemon juice, and a little bit of salt.
